  • 1 cup softened butter
  • 2 cups white sugar
  • 2 eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 5/8 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup blueberries - either frozen or fresh
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon confectioners' sugar

    Blueberry Sour Cream Coffee Cake Recipe Directions

  • Preheat the oven to 350 degrees Fahrenheit
  • Use a 9" bundt pan - grease and flour
  • Mix in a large bowl the butter and sugar making it light and fluffy by creaming it together
  • One at a time beat in the eggs
  • Then stir in the vanilla and sour cream
  • Stir into the batter the combination of baking powder, salt, and flour until well blended
  • Fold in the blueberries
  • Then spoon in 1/2 of the batter into the bundt pan
  • Mix together the brown sugar and cinnamom in a small bowl
  • Sprinkle 1/2 of the brown sugar & cinnamon mix over the batter that is in the pan
  • Spoon the other 1/2 of the batter over the top
  • Sprinkle the other 1/2 of the sugar & cinnamon mix over that
  • Swirl the sugar layer into the cake batter with a knife or thin spatulaa
  • Pre heat the oven, then bake 55 to 60 minutes or until a knife comes out clean from the crown of the cake
  • Cool in the pan
  • Invert the cake on a serving plate while tapping firmly to remove the pan
  • Dust the cake with confectioners sugar when ready to serve
